Cornalls Fish Cakes

Perfect as a starter or main course, these fish cakes are packed with flavour and are quick and easy to cook.

350g Cornalls fish pie mix

1 small leek

1 shallot

1 clove garlic

Dried parsley

Dried thyme

3 medium potatoes

Butter

1 egg

Flour

Panko breadcrumbs

Salt & pepper

Olive oil

Step 1

Peel, chop and boil potatoes. Cook until soft.

Step 2

Mash potatoes and leave to cool.

Step 3

Poach fish for 4 minutes until cooked, and leave to cool.

Step 4

Sauté chopped leek, shallot and garlic in a knob of butter until soft.

Step 5

Combine mash, fish, sautéed leeks etc into a bowl. Add some dried parsley and thyme, salt & pepper and combine.

Step 6

Form the mixture into balls.

Step 7

Roll the fish cakes in flour, egg and then breadcrumbs.

Step 8

Fry on all sides until golden, then finish in the oven until piping hot in the middle.

Step 9

Serve with tartare sauce and fresh green salad.
