Cornalls Fish Pie

Nothing beats a creamy fish pie. This comforting family-friendly dish is quick and easy to rustle up.

Single cream

Tarragon

Parsley

Peeled prawns

2 large potatoes

350g Cornalls fish pie mix

1 leek

1 clove garlic

1 small shallot

Butter

White wine

Frozen peas

Cheese

Sea salt & pepper

Step 1

Peel, boil, then mash the potatoes.

Step 2

While potatoes are boiling, poach the fish mix for 3 to 4 minutes and sieve. Set the liquid aside for later use.

Step 3

Using a sauté pan, melt a knob of butter, add chopped leek, shallot and garlic. Sauté until soft.

Step 4

Add a slug of white wine, a little of the fish juices, then the cream, tarragon, parsley, prawns and peas. Season with sea salt & pepper. Reduce until thick & creamy sauce.

Step 5

Place fish in an oven dish, add the sauce and cover with mashed potatoes and a sprinkling of grated cheese.

Step 6

Bake in the oven at 180C until the cheese is golden and the pie is bubbling.
